The Matcha Hype: How to Recognize Genuinely Good Matcha - And Why Not Everything Green Is Automatically High Quality

Matcha is not simply „green tea as a powder“ but a specially grown and processed product made from shaded tea leaves. That shading changes the composition, among other things in terms of chlorophyll, theanine and other compounds, and contributes to colour, taste and aroma. At the same time, current research shows that different matcha qualities differ markedly — and that „more expensive“, „ceremonial“ or „intensely green“ does not automatically mean „better“ in every respect. Particularly interesting: a more recent comparative study found that culinary matcha in part had higher levels of phenolic compounds and stronger antioxidant activity than ceremonial matcha, while ceremonial matcha was associated with higher chlorophyll and caffeine content and a greener colour.
